Bread pizza

This bread pizza is perfect for starters and heavy snacks and  tastes  more or less like a regular veggie pizza,its the best subsitute for the pizza base and very easy to make with your fav toppings.
ingredients :
4 bread slices ( i used wholemeal sandwhich sliced bread )
1 cup bite size mix vegetables of your choice ( bell peppers,sweet corn kernels,paneer pcs,tomatoes,onions ,olives,jalepenos)
pizza sauce to taste
oregeno /chives dried herbs(for seasonings) to taste
shredded cheddar cheese to taste
salt to taste
pepper to taste

method :
Mix salt and pepper in all the mixed vegetables and keep aside.Preheat oven to 200c,spread pizza sauce on one side of the bread ,top it with some mix veggies on it,spread some cheese on top and sprinkle the seaosonings on top of it.Bake for 10 mins or till cheese melts and bread is completely toasted.Serve hot with tomato ketch up.

mughlai paratha

Mughlai parathas were introduced to me by my co-sister ,she made these heavy but lovely parathas which were loved by all our family members,these parathas are made up of plain flour but can also be made using normal regular wheat flour but definately the softness and taste will differ,the stuffing is of boiled and mashed potato and grated paneer which r main ingredients but is quite different from the usual aaloo panner paratha as the stuffing is placed on a gram flour ( besan ) pancakes which is unusual and thats the main key ingredient in these paratha.Sending this to jay's event letz relishh paneer.








ingredients for dough :
2 cups plain flour
salt to taste
1-2 tbsp sugar
2-3 tbsp oil
water as required to make a medium soft dough

ingredients for besan chillas :
1 cup besan
1/2 tsp carom seeds ( ajwain )
1-2 tsp red chilli pwd ( or as per taste )
salt as per taste
water as required to make a medium batter
ltl oil for frying chillas

ingredients for stuffing :
4-5 medium sized boiled and mashed potatoes
1 cup grated paneer
2-3 green chillies finely chopped
1 finely chopped onions
2 tsps garam masala pwd
salt to taste
a handful of chopped corriander leaves
lemon juice to taste.

method :
Mix the dough ingredients and make the dough,cover and keep for an hr.Mix the besan chilla ingrediants and make small/mini  (puri sized ) besan chillas and keep aside.Mix all the stuffing ingredients together and keep aside.For making parathas,divide and make mandarin size balls of the dough,roll out 1 ball into small chapati size , take one small besan chilla and apply stuffing on it one side and keep the chilla filled with stuffing side on the chapati and cover nicely from all the sides,roll into dry flour and make a paratha and fry well with ghee on tava /non stick pan and serve hot .

beans on toast

This recipie was actually made by using baked beans ( which comes in ready made in a tin )but i never liked that taste as i found it was too sweet so i tried my own way of making it.
Ingredients :
1.black eyed beans – 1 cup
2.turmeric pwd – 1tsp
3.red chilli pwd – 1/2tsp
4.garam masala – 1/2tsp
5.hot and sweet tomato ketchup – 1tsp
6..salt – to taste
7.oil – 2tsp
8.bread slices
9.corriander chutney
10.tomato ketch up
11.chopped onions


Method :

1.Soak beans for 2-3 hrs.pressure cook it adding a pinch of turmeric pwd and ltl salt .
2.take oil and add the beans and all masalas and ketchup and mix well and keep it aside.

Making beans on toast :

1.toast the breads
2.cut each toast into 6 equal ( squares ) pcs
3.put 1 tsp of beans mix on each pc of toast
4.on beans put coriander chtney
5.on coriander chutney put ltl tomato kethup
6.and lastly add onions on ketchup and serve it.

samosa chat

ingredients:
1. Samosa2. Chole3. Coriander Chutney( I used pattu Bombay sandwich green chutney in Melbourne) 4. IMLI Chutney 5.onions

Filling for Samosa:
1. Potato – 4-5pcs (medium size)
2. Peas – 1/ 2 cup (Frozen)
3. Cumin – 1 /2 tsp.
4. Chilli Powder – 1tsp
5. Turmeric Powder – 1tsp
6. Garam Masala Powder – 1tsp
7. Cumin Powder – 2 tsp
8. Coriander Powder – 1tsp
9. Coriander Leaves – 2 tsp Chopped
10.Salt – To taste
11. Oil – 3 tsp
Method:

1.boil potatoes and peas separately and mash them
2.heat oil and add cumin seeds (jeera)
3.add mashed potatoes and peas and all the masalas and corriander leaves
4.mix well and keep it aside.

SAMOSA COVERING
Ingredients:

1.maida - 250gms
2.oil – 2 tbsp
3.salt – to taste
4.water - as per required

Method:
1. Mix the maida with the oil, water, Salt, make a soft dough.
2. Cover with moist cloth and keep a side the dough for atleast half an hr.
3. Divide the dough into small portions and roll it into rounds.
4. Cut the rounds in half, fold each into a cone shape.
5. Seal sides of cone with water and fill with potato mixture.
6. Seal the edges using little water.
7. Deep fry the samosa on medium flame until they are golden brown.
8. Drain on absorbent paper.

Chole Ingredients:
1. Chana (Kabuli chana) – 1 1/4th cup
2. Chopped Onion – 1 /2 cup
3. Tomato – 1/4th cup chopped
4. Ginger paste – 2tsp
5. Garlic paste – 2tsp
6. Cumin – 1/4th tsp
7. Cumin Powder – 2tsp
8. Coriander Powder – 2tsp
9. Turmeric Powder – 2pinchs
10. Garam Masala – 2 pinchs
11. Red chilli powder – 1/4th tsp
12. Salt – To taste
13. Oil – 3tsp

Method:

Soak chana in water about 6-8hrs.Cook the chana with a pinch turmeric and salt in the cooker. Allow it to whistle till done.Heat oil in a kadhai or pan add cumin (JEERA) , when cumin being to splutter.Add onion and fry it on medium flame.Put Ginger paste, Garlic and all powder and fry till it begin to golden colour on medium flame.Add tomato and fry it, now put boiled chana ,1cup water and boil it for 5-8minutes.

Coriander Chutney:Ingrediants:
Coriander Leaves – 1bunch (aprox. 1cup)
Garlic Cloves – 3
Ginger 1 /2”
Green chilli – 2pcs
Roasted Cumin – 1tsp
Salt – To taste
Method:
Add all the things with little water in Mixer grinder jar and make a smooth paste.

Imli Paste:Ingredients:
Imli – 1 /4th cup Paste
Salt – 1 ½ tsp
Sugar – 3-4 tsp
Roasted Cumin powder – 1/4th tsp
Black Pepper Powder – 1 /4th tsp
Mix all things and make a liqiud thin paste.

For Garnishing:Ingredients:
Finely chopped Onion
Coriander Leaves
 curd
Thin Sev

Making samosa chaT:

Take two pieces of samosa in a plate. Crush both SAMOSAs and put following items one by one over it :
1. CHOLE2. Curd3. Coriander Chutney4. Imli Chutney5. Chopped Onion6. Cumin Powder and black Salt (or Chat Powder)7. SEV 8. Coriander Leaves
The above samosa chat prepration was for one plate. Please follow the same steps for other plates.

paneer butter masala

This recipe is just mouth watering and once you make this at home i bet you will never go to restaurant and order for paneer butter masala,this is one of my favourite dish which i first tasted at my friends place in bangalore,who stays right above my apartment and is a very good cook,i have learnt a lot from her and tried many of her recipes and posted on this blog.I really thank her for sharing her great recipes ,though i miss her taste still i manage to make more or less like her.Please adjust the spices according to the your taste buds as i like this recipe with the same measurements given below ,it may be a little hotter side for few.sending this to jay's letz relishh paneer event.
Ingredients :

1.paneer – 250gms
2.tomatoes – 3-4 medium
3.onions – 1 large
4.ginger – chopped 1 tsp
4.garlic – chopped 1tsp
5.green chillies – 2-3
6.bay leaves -1-2
7.turmeric pwd – 1tsp
8.red chillie pwd – 1tsp
9.garam masala – 1tsp
10.black pepper pwd – 1tsp
11.sugar – 1 tsp
12.salt – to taste
13.oil / ghee / butter for frying
14.milk – 1/4cup
15.fresh cream – 1/4 cup
16.vegetable stock – 1/4 cup
17.kasthuri methi – 2tbsp
18.cashew nuts – 7-8

Method :

1.Pressure cook onions,tomatoes,ginger,garlic,green chillies,cashew nuts.allow them to cool and strain the water and keep the this stock aside.
2.After the above ingredients cool down grind it to make a paste
3.Take abt 2-3 tbsp oil in kadhai /pan ( I prefer oil but making dis recipie in butter will taste awesome ),add the ground paste and fry till all the water evaporates
4.Add all the masalas and fry for 2-3 mins
5.Then add milk and cream and simmer for a while
6.Lastly add paneer pcs and mix well and keep it on slow flame for 5-10 mins and serve it hot with plain hot steamed rice or naan/rotis.

oat cookies

ingredients :

1 cup oats
1cup self raising flour
1cup sugar
1cup butter
1-2 tsp milk ( optional only if req )
cardomon pwd as per taste
dessicated coconut as per taste
pistas as per taste

method :
mix all the above ingredients together.preheat the oven on 200c .grease and dust the baking tray.take 1 tbsp approx mix and make pendas and keep on the baking tray .there should be a distance of atleast 1 inch between each pendas.bake for 20-25 mins and keep checking till it turns brown in colour.let it cool down and stand for 10-15 mins and after cooling completely you can store in air tight containers.
