spring rolls

Spring rolls are very famous appetizers in chinese cuisine and are loaded full of vegetables ,i have made the covering also many a times before(in india ),though here i have used ready store bought spring roll sheets which i found was quite effortless to make as earlier i felt spring rolls were tedious to make and were too oily but this is a great party idea when u are having less time in your hands ,we can also freeze before hand and then fry as and when required.
ingredients :
11/2 cups of vegetables( carrot,capsicum,cabbage cut into thin strips,french beans cut into diagonally)
1/2 cup spring onions finely sliced
1/2 cup boiled strained rice vermicilli noodles
10-12 ready (store brought) spring roll sheets
3 tsps soya sauce
1 tbsp green chilli sauce ( adjust according to the taste )
black pepper pwd to taste
salt to taste
1-2 tsps oil
method :
Heat the oil in a wok,add all the veggies and stir fry on high for 3-5 mins ( take care and do not over fry ,the vegetables should be little crispy ),add noodles,soya sauce,chilli sauce,salt and pepper,stir again for a min,cool this filling and keep aside.Place diagonally one sheet of spring roll on dry surface ,meanwhile cover the rest sheets with damp cloth to avoid drying,spoon the veggie filling on the corner and roll it once then fold in the two sides and roll again tightly and continuosly till the edge,seal the edge with water or maida and water paste well so that they dont break while frying ,deep fry the spring rolls till brown and drain out on a paper towel.Cut each roll diagonally in the centre and serve hot .

fairy bread / princess bread

This is the easiest snack for the kids and is simply effortless yet attractive and filling ,it is also handy and very good idea for a lazy early morning tiffins for kids,we can even cut the bread slices in any of your child's favourite shape and is also perfect for small kid's parties.






ingredients :
soft white bread  slices
butter
100's & 1000's balls ( used for decorating cakes/icecreams/cupcakes )
method :
Chop out the side brown portions of the bread.Apply butter on one side and cut it diagonally or any shape you wish with knife or even you can use a cookie cutter,sprinkle the tiny balls all over (they will stick automatically on butter).Its ready to serve.

rocky crunchy cookies

My husband loves to try different variety of cereals ,specially cornflakes and this time he brought crunchy cornflakes which was little sweet as they were honey flavoured but he didnt like the sweet taste so he brought another huge box of plain regular ( original )cornflakes and he mixed the two together so that the sweetness was balanced and now daily he was having it and few days back when i saw the boxes very little quantity as left so the other day i emptied the dabba and transfered the little portion in a smaller container & was about to throw the two big boxes suddenly i saw the recipes given on them and liked one of them which was eggless and quite healthy & easy ,i  replaced sultanas as i really dont like them and making these cookies more healthy and crunchy because of oats,it really turned out well and my first batch was over in couple of days so i had to make some more again for the party.So guys please have a look on your cornflake boxes before throwing or else you may miss yum yum recipes ;) Sending this over to chaitra's bread mania event.
ingredients :
11/2 cup cornflakes ( i used 2 varieties 1 cup crunchy honey cornflakes and 1/2 cup plain cornflakes )
13/4 cup plain flour/maida
110 gms soft butter
1/2 cups sultanas ( though i susbsituted them by 1/2 cup rolled oats )
1/2 cup sugar
1/4 cup milk
2 tsps baking powder
method :
Preheat oven to 180c.Beat butter and sugar together till light and fluffy.Add sifted flour,baking pwd and mix,add cornflakes and oats gently and make a stiff dough using the milk.Place heaped teaspoons of mixture on greased baking tray and bake for 10-15 mins .( please keep checking it may take more or less time depending on the oven ).Let it stand for few mins and then remove from the tray as it may be soft when hot but gradually turns hard when cooled.These cookies can be stored in airtight containers for couple of weeks.

veg pinwheel puffs

Veg puffs are very common in india in bakeries and i never thought that one day i would be making these at home until i came here to australia.Here, we get easily ready made puff pastry sheets which i suppose is quite handy and easier also we can make whenever we are feeling lazy to cook or if we have some last moment guests,i have tried various fillings but in regular puff shapes but one day when i went through nayana's simply.food blog,i was quite attracted to this shape of pinwheel and thought it will be quite handy for a party thus i made these for my daughter's birthday party and all my friends really liked it :P.I am really sorry for the bad photography (taken by my husband ;) ) as i was too busy with the preparations and really was tied up .
ingredients :
2 cups finely chopped mixed vegetables (carrot,potatoes,peas,french beans, very small florets of  cauliflower etc )
1 onion finely chopped
2 tsp ginger garlic paste
2-3 store bought puff pastry sheets
2 tsp red chilli pwd
1 tsp garam masala
2 tsps corriander pwd
salt to taste
1 tbsp oil
lemon juice to taste
method :
Heat oil,add onions and fry till transparent,add ginger garlic paste,add all the chopped vegetables, cover and let it cook till tender on a low heat,add all the masalas and fry for some time.Mix well and keep aside.Preheat the oven on 200 c .Thaw the pastry sheets for 5-10 mins,sprinkle some dry plain flour on the surface and place one pastry sheet on it and spread a serving spoon full of vegetable mixture all over ,from one side of the sheet gently start rolling till the other end and cut into equal wheels using a sharp knife ( do roll the knife in some dry flour to avoid the mixture sticking to the sheets while cutting ).Place these wheels on a greased baking sheet and bake for 10-15 mins or till browned ( pls keep checking as there are different oven settings ).Serve hot with green chutney and tomato ketchup.
